Lubbock's vibrant culinary scene just got a whole lot more interesting with the arrival of Lubbock Street Eats, a food truck offering a taste of the Himalayas. This exciting new venture is the brainchild of Prabesh KC, a Texas Tech graduate who, after experiencing Lubbock's diverse food scene, noticed a distinct absence: Nepalese cuisine.

Hailing from Nepal himself, KC recognized an opportunity to introduce Lubbock residents to the unique flavors and spices of his homeland. "After completing my undergraduate degree in chemical engineering," KC explains, "I decided to stay back and embark on a new kind of engineering – the engineering of taste buds!"
Lubbock Street Eats, which opened its doors (or rather, its serving window) in February, boasts a concise menu that allows each dish to shine. Featuring two staples of Nepalese and Tibetan cuisine – Keema Noodles and Momos – the menu offers a delightful exploration of Himalayan flavors.
Keema Noodles, a savory dish of noodles tossed with a vibrant soy chili sauce, features ground meat, onions, and peanuts for a satisfying textural contrast. Finished with a sprinkle of green onions, this dish is a symphony of savory, spicy, and nutty notes.
Momos, the undisputed stars of the menu, are Nepalese dumplings that have garnered a loyal following across Southeast Asia. These delightful pockets come in steamed or fried variations and are filled with a fragrant combination of ground meat, onions, coriander, and a symphony of Nepalese spices. Each order comes with a side of sauce and soup, offering a delightful dipping experience.
"Momos are a crowd favorite here, mirroring their popularity in other Southeast Asian countries," says KC. "But our mission goes beyond just serving delicious food.
